Nutrition and Dietary Needs

Introduction to Professional Nutrition

Nutrition is the science that studies food, its nutrients, and their effects on the human body. For a cook holding a Certificate of Qualification (Red Seal), mastering nutritional principles is not an option — it's a professional requirement. You must be able to plan menus that meet clients' physiological needs, adapt recipes for dietary restrictions, and understand how cooking methods alter the nutritional value of foods.

The Canada's Food Guide (published by Health Canada) is the national reference for nutritional recommendations. Although it is not a regulatory code, it is used as a standard of practice in the Canadian foodservice industry. The current version (2019) abandoned the concept of "servings" in favour of a plate divided into three sections: half vegetables and fruits, one-quarter protein foods, one-quarter whole grains.

Essential Definitions

Nutrient: A chemical substance found in foods, used by the body for its functioning. Distinguish between macronutrients (carbohydrates, lipids, proteins) and micronutrients (vitamins, minerals).
Calorie (kcal): Unit of measurement for the energy provided by a food. In professional nutrition, the kilocalorie (kcal) is used — 1 kcal = 1000 physical calories.
Nutritional value: The set of nutrients contained in a food, usually expressed per serving or per 100 g.
Allergen: A substance that triggers an abnormal immune reaction in some people. Canada recognizes 11 priority allergens (see table below).
Food intolerance: A non-immune reaction to a food, often due to an enzyme deficiency (e.g., lactose).
Celiac disease: An autoimmune disease triggered by gluten, a protein found in wheat, barley, and rye.
Nutritional density: The ratio between the amount of nutrients and the number of calories in a food. A high nutritional density food provides many nutrients for few calories.

Macronutrients

Carbohydrates

Carbohydrates are the body's main source of energy. They provide 4 kcal per gram. They are classified into two categories:

The glycemic index (GI) measures how quickly a carbohydrate raises blood glucose levels. A high GI (>70) causes a rapid glycemic spike; a low GI (<55) releases energy gradually. For "health-conscious" menus, favour low or moderate GI foods.

Practical rule: Carbohydrates should represent 45 to 65% of an adult's total caloric intake, according to Canadian recommendations.

Lipids (Fats)

Lipids provide 9 kcal per gram — the most concentrated energy source. They are essential for the absorption of fat-soluble vitamins (A, D, E, K) and hormone production.

Canadian rule: Industrial trans fats are banned in foods sold in Canada since 2018 (Trans Fat Regulation, Health Canada). Animal-based trans fat (naturally present in dairy products and meat) remains permitted but should be limited.

Proteins

Proteins provide 4 kcal per gram. They are composed of amino acids, 9 of which are called "essential" because the body cannot synthesize them. A complete protein contains all 9 essential amino acids in adequate amounts.

Key concept — Protein complementation: By combining two incomplete plant proteins (e.g., rice + beans), you obtain a complete amino acid profile. This technique is essential for planning vegetarian and vegan menus.

Recommended intake: 0.8 g of protein per kilogram of body weight per day for a sedentary adult. A cook must know how to adapt this figure: 1.2 to 2.0 g/kg for athletes, 1.2 g/kg for older adults.

Micronutrients

Vitamins

Vitamins are organic compounds needed in small amounts. They do not provide energy but act as cofactors in metabolic reactions.

Vitamin loss during cooking: Vitamin C can lose up to 50% of its activity when boiled in water for 10 minutes. Thiamine (B1) loses 25% during cooking. Cooking methods that minimize contact with water and heat (steaming, quick sautéing, al dente cooking) better preserve vitamins.

Minerals

Minerals are essential inorganic elements. Unlike vitamins, they are not destroyed by heat, but they can be leached into cooking water.

Professional note: Table salt in Canada is mandatory iodized (Food and Drug Regulations, section B.01.004). A cook must never replace iodized salt with non-iodized sea salt in recipes intended for the general public, unless specifically indicated for medical reasons.

Dietary Fibre

Fibre is indigestible carbohydrates. It does not provide calories but plays a crucial role: regulating intestinal transit, controlling blood glucose, reducing cholesterol.

Soluble fibre: oats, barley, legumes, apples. Forms a gel in the intestine, slows glucose absorption.
Insoluble fibre: wheat bran, green vegetables, whole grains. Accelerates intestinal transit.

Recommended intake: 25 g per day for women, 38 g for men (Canadian adults). The actual average in Canada is about 15 g — a significant gap that the cook can close by incorporating more legumes and whole grains into menus.

Water and Hydration

Water represents about 60% of an adult's body weight. Daily needs are 2 to 3 litres (including water contained in foods). In a foodservice context, water is also a flavour carrier and a cooking agent.

Water loss during cooking: Vegetables lose 10 to 30% of their weight in water during cooking. Meats can lose 20 to 40% depending on the method and degree of doneness. This loss affects the yield of recipes — an essential calculation for cost control.

Allergens and Dietary Restrictions

The 11 Priority Allergens in Canada

The Food and Drug Regulations (Canada) requires that the following 11 allergens be declared on labels and menus:

Golden rule in the kitchen: Cross-contamination is the most frequent cause of allergic reactions in foodservice. It occurs when allergens are transferred from one food to another through utensils, cutting boards, frying oils, hands, or work surfaces.

Prevention procedures:

Use colour-coded cutting boards for allergens
Clean and sanitize all surfaces between preparations
Never reuse frying oil that has been used to cook foods containing allergens
Check labels on all products, including sauces and seasonings
Train all staff on allergen recognition

Common trap: Gluten is present in soy sauce, beer, malt vinegar, bouillon cubes, and many processed foods. A "gluten-free" dish is not gluten-free if conventional soy sauce has been used.

Nutritional Calculations and Yield

Calculating the Caloric Value of a Recipe

To calculate the total caloric value of a recipe, add the calories of each ingredient:

Formula: Total calories = Σ (mass of ingredient in g × calories per 100 g ÷ 100)

Example: A sauce made with 200 g of cream (340 kcal/100 g) and 50 g of butter (750 kcal/100 g):

Cream: 200 × 340 ÷ 100 = 680 kcal
Butter: 50 × 750 ÷ 100 = 375 kcal
Total: 1055 kcal for the complete recipe

Calculating Yield

Yield is the ratio between the usable weight after preparation and the gross weight:

Nutritional application: Yield affects the nutritional value per serving. If a recipe is planned for 4 servings but the actual yield is only 3.5 servings, each serving will contain more calories than planned.

Recipe Conversion

To adapt a recipe to a different number of servings:

Conversion factor = (Desired number of servings ÷ Original number of servings)

Multiply each ingredient by this factor. Be careful with spices and seasonings: the conversion factor does not always apply linearly (spices should not always be doubled).

Cook's rule: Al dente cooking (vegetables still crisp) preserves 20 to 30% more vitamins than prolonged cooking. Vegetables should be cut into large pieces to reduce the surface area in contact with water.

The Maillard Reaction

The Maillard reaction (starting at 140 °C) creates aromatic compounds and brown pigments. It improves flavour but reduces the availability of certain amino acids (lysine). It is not caramelization — that concerns only sugars and begins at 160 °C.

Canadian Standards and Regulations

Food and Drugs Act

This federal act governs food safety and labelling in Canada. Key points for the cook:

Canadian Electrical Code, Part I

Although this may seem off-topic, the Canadian Electrical Code, Part I (C22.1) applies to cooking equipment. Rule 8-200 concerns circuits for ranges and ovens — a cook must know the power requirements to properly install the electrical equipment in their kitchen.

CSA B149.1 — Natural Gas and Propane Code

The CSA B149.1 standard governs the installation of gas appliances in professional kitchens. Relevant sections include:

Section 7: Venting of combustion products

A certified cook must know these requirements to ensure the safety of their workstation, even though the installation itself is performed by a certified technician.

Good Handling Practices (HACCP)

The HACCP system (Hazard Analysis and Critical Control Points) is the recognized food safety standard in Canada. Nutrition-related critical control points:

Critical control point 1: Cooking temperature — foods must reach a minimum internal temperature (e.g., poultry at 74 °C, ground meat at 71 °C)
Critical control point 2: Hot holding — above 60 °C
Critical control point 3: Rapid cooling — from 60 °C to 20 °C in 2 hours, then to 4 °C within an additional 4 hours

Planning Nutritionally Balanced Menus

Canada's Food Guide (2019)

The current guide recommends:

Half the plate: vegetables and fruits (varied, different colours)
One-quarter of the plate: protein foods (including legumes, often cheaper and more sustainable)
One-quarter of the plate: whole grains (whole wheat bread, brown rice, quinoa)
Water as the beverage of choice

Application in Professional Cooking

To create a balanced menu, apply the following rule: each plate must contain at least 3 food groups, with a dominance of vegetables. For a 5-course menu, vary protein sources and incorporate at least one vegetarian dish.

Calculating the nutritional value of a menu: For a complete menu, add the values of each dish. A balanced meal for an average adult (2000 kcal/day) should provide:

Pitfalls to Avoid

124.Confusing calories and kilocalories: In nutrition, "calorie" always means "kilocalorie." Do not confuse with the physical calorie (1 kcal = 1000 cal).
125.Forgetting hidden allergens: Worcestershire sauce contains anchovies (fish). Bouillon cubes may contain gluten. Commercial mayonnaise contains eggs. Always check labels.
126.Believing that "gluten-free" means "wheat-free": A product may contain wheat without gluten (deglutenized wheat) or be wheat-free but contain barley. Read complete labels.
127.Neglecting vitamin loss during boiling: Discarding vegetable cooking water eliminates up to 50% of water-soluble vitamins. Reuse this water for soups or sauces.
128.Using the same frying oil for all foods: Frying fish contaminates the oil with fish proteins — a danger for people with allergies.
129.Ignoring yield in nutritional calculations: If you calculate calories on gross weight instead of net weight, you underestimate the actual caloric value per serving.
130.Confusing intolerance and allergy: Lactose intolerance is not a milk allergy. An intolerant person can consume small amounts; an allergic person cannot.
131.Forgetting that sea salt is not iodized: In Canada, table salt is iodized, but sea salt, kosher salt, and pink salt generally are not.
132.Not adapting portions for vulnerable populations: Children, older adults, and pregnant women have different nutritional needs. A standard menu is not suitable for everyone.
133.Believing that trans fats are completely absent from foods: Natural trans fats (from ruminants) exist in meat and dairy products. They are less harmful than industrial trans fats but should be limited.
