Introduction to Garde Manger

The garde manger is the section of the kitchen responsible for preparing foods served cold: hors d'oeuvres, salads, charcuterie, terrines, pâtés, smoked fish, marinades, cold sauces, and garnish elements. For the Red Seal exam, you must master not only preparation techniques, but also the principles of food safety, portion calculation, and the Canadian standards that govern these operations.

The term "garde manger" refers to both the person, the work station, and the adjoining cold room. In a classic brigade structure, the chef garde manger (or cold chef de partie) supervises this section. The service temperature of cold foods must be maintained at 4 °C or lower for potentially hazardous foods, and the preparation area must be maintained at an ambient temperature not exceeding 25 °C according to good practices from the National Building Code and food safety guides from the Canadian Food Inspection Agency (CFIA).


Fundamental Principles of Cold Kitchen Food Safety

The Cold Chain

The cold chain is the uninterrupted maintenance of a controlled temperature, from receiving goods to service. Any break in this chain increases the risk of bacterial growth. Pathogenic bacteria multiply rapidly between 4 °C and 60 °C, a zone called the "danger zone."

Rule of thumb: upon receiving, the internal temperature of refrigerated foods must never exceed 4 °C. Frozen foods must be received at -18 °C or lower. A calibrated probe thermometer is mandatory at receiving.

Cross-Contamination

Cross-contamination is the transfer of microorganisms from one food (often raw) to another food (often cooked or ready-to-eat). In the cold kitchen, the risk is high because many products are handled without subsequent cooking.

Mandatory preventive measures:

Use colour-coded cutting boards (red for raw meat, blue for raw fish, green for fruits and vegetables, yellow for raw poultry).
Sanitize surfaces with a 200 ppm (parts per million) chlorine solution or an approved sanitizer.
Physically separate preparation areas for raw foods and ready-to-eat foods.
Wash hands for at least 20 seconds with warm soapy water before and after handling any raw foods.

Critical Temperatures and HACCP

The HACCP system (Hazard Analysis and Critical Control Points) is the reference standard in Canada. Critical control points (CCPs) in the cold kitchen include:

Receiving (temperature, packaging integrity).
Refrigerated storage (temperature, FIFO rotation — First In, First Out).
Preparation (maximum cumulative handling time at room temperature: 30 minutes).
Service (maintaining at 4 °C or lower).

Heat load calculation: when a large quantity of warm food is placed in a refrigerator, the internal temperature of the unit can rise above 4 °C. To prevent this, divide foods into portions of 5 cm maximum thickness in shallow containers, and never fill a refrigerator beyond 80% of its capacity.


Preparation Techniques: Salads and Vinaigrettes

Composed Salads

A composed salad is a cold dish that combines several ingredients: vegetables, proteins, starches, fruits, nuts, cheeses. The composition principles are:

Texture balance: crunchy (crudités, nuts), tender (cooked starches), creamy (cheese, avocado).
Flavour balance: sweet, sour, salty, bitter, umami.
Colour balance: at least three distinct colours for visual appeal.

Portion calculation: a standard side salad is 75 g to 100 g per person; a main-course salad is 150 g to 200 g per person. For a banquet of 120 people, plan therefore 120 × 175 g = 21 kg of main-course salad (on average).

Vinaigrettes: Ratios and Emulsions

A vinaigrette is a temporary or stable emulsion of oil and vinegar. The classic ratio is 3 parts oil to 1 part vinegar (3:1). A stable vinaigrette (permanent emulsion) requires an emulsifying agent: mustard, egg yolk, honey, or lecithin.

Emulsion procedure:

37.Mix the vinegar, mustard, salt, and pepper in a bowl.
38.Add the oil in a very fine stream while whisking vigorously.
39.Once the emulsion has started (the mixture thickens), the oil flow can be increased.
40.Adjust the seasoning. Salt must be added before the oil so it dissolves in the vinegar.

Exam trap: a "broken" (separated) vinaigrette can be recovered by whisking it with 1 teaspoon of warm water or by starting with a fresh egg yolk and gradually incorporating the broken vinaigrette.

Mayonnaise and Its Derivatives

Mayonnaise is a stable emulsion of oil in a mixture of egg yolk, vinegar or lemon juice, and seasoning. The standard ratio is 250 mL of oil per egg yolk (approximately 240 g of oil for 15 g of yolk).

Ingredient temperature: all ingredients must be at room temperature (20 °C to 22 °C) for a successful emulsion. Cold ingredients will cause the emulsion to "break."

Mayonnaise derivatives:

Tartar sauce: mayonnaise + chopped pickles, capers, parsley, tarragon.
Rémoulade sauce: mayonnaise + mustard, pickles, anchovies, capers.
Thousand island sauce: mayonnaise + ketchup, sweet relish, chopped hard-boiled egg.
Aïoli sauce: mayonnaise + crushed garlic.

Food safety: homemade mayonnaise keeps for only 24 hours in the refrigerator (4 °C). It must never be left at room temperature for more than 2 cumulative hours.

The Forcemeat: Principles and Calculations

The forcemeat (or terrine mixture) must contain a precise balance of:

Lean proteins (meat, poultry, game): 60% to 70%.
Fat (pork fat, cream, butter): 20% to 30%.
Binder (eggs, cream, panade): 10% to 15%.
Seasoning (salt, spices, aromatics): 1.5% to 2% of total weight in salt.

Salt calculation: for 1 kg of forcemeat, use 15 g to 20 g of salt (1.5% to 2%). For a 2.5 kg terrine of forcemeat, this gives 2.5 × 17.5 g = 43.75 g of salt (using the average of 1.75%).

Panade is a mixture of bread or flour with a liquid (milk, cream, stock) that serves as a binder and moistener. Standard ratio: 100 g of stale bread for 200 mL of liquid.

Cooking and Internal Temperature

Terrines and pâtés are cooked in a bain-marie (terrine) or in the oven (pâté en croûte). The final internal temperature must reach:

Pork: 71 °C (160 °F).
Poultry: 74 °C (165 °F).
Game: 71 °C (160 °F).
Veal: 71 °C (160 °F).

Bain-marie cooking procedure:

70.Preheat the oven to 160 °C (325 °F).
71.Fill the terrine with forcemeat, cover.
72.Place the terrine in a deep pan and pour boiling water up to 2/3 of the height of the terrine.
73.Cook until the internal temperature reaches the target.
74.Cool quickly: first at room temperature (max 2 hours), then in the refrigerator.

Cooling: the terrine must go from 60 °C to 20 °C in 2 hours maximum, then from 20 °C to 4 °C in 4 additional hours. This two-stage cooling is a food safety requirement of the National Building Code and CFIA guides.

The Jelly (Aspic)

Jelly is a flavourful liquid (broth, stock) that has been clarified and set with gelatin. The standard ratio is 10 g of powdered gelatin for 500 mL of liquid (i.e., 20 g/L). For a firmer jelly (for coating), use 15 g to 20 g per 500 mL.

Clarification procedure:

79.Prepare a clear, defatted broth.
80.Hydrate the gelatin in cold water (5 to 10 minutes).
81.Heat the broth to 60 °C (do not boil).
82.Dissolve the hydrated gelatin in the hot broth.
83.Cool to 4 °C for the jelly to set.

Exam trap: gelatin must never boil — this destroys its gelling power. The maximum dissolution temperature is 60 °C.


Cold Fish and Seafood

Raw Fish: Sashimi and Ceviche

Sashimi is raw sushi-grade fish, cut into thin slices. Ceviche is raw fish "cooked" by the acidity of lemon or vinegar (protein denaturation).

Food safety requirements for raw fish:

The fish must have been frozen at -20 °C for at least 7 days or -35 °C for 15 hours to destroy parasites (anisakis). This requirement complies with CFIA recommendations.
The service temperature must be 4 °C or lower.
Handling time at room temperature must not exceed 15 minutes.

Marinating time calculation for ceviche: the fish is "cooked" by the acidity. For 1 cm cubes, the marinating time is 15 to 20 minutes. For whole fillets, 30 to 45 minutes. Beyond 60 minutes, the fish becomes rubbery.

Cold-Smoked and Hot-Smoked Fish

Pre-salting: the fish must be salted (dry or wet brine) before smoking. Wet brine ratio: 80 g of salt per 1 L of water (8%). Salting duration: 30 minutes per 500 g of fish.

Exam trap: cold smoking does not cook the fish. Cold-smoked fish must be frozen at -20 °C for 7 days before consumption to eliminate parasites, unless it was frozen before smoking.

Seafood: Cooking and Cooling

Shrimp must be cooked to an internal temperature of 74 °C (165 °F). Cooking time is 2 to 3 minutes in boiling salted water (30 g of salt per litre). After cooking, they must be cooled in an ice bath (50/50 water and ice) for 5 minutes.

Oysters and mussels must be alive upon receiving (closed shells). Mussels are steamed for 5 to 7 minutes until they open. Any mussel that does not open after cooking must be discarded.


Charcuterie and Cured Meat Products

Dry Sausages and Fermentation

Dry sausage (saucisson sec) is a fermented and dried charcuterie product. Lactic fermentation lowers the pH to 4.8 - 5.2, which inhibits pathogenic bacteria. Drying reduces water activity (aw) to 0.85 or less.

Critical parameters:

Fermentation temperature: 22 °C to 25 °C, relative humidity 85% to 90%.
Fermentation duration: 24 to 72 hours.
Drying temperature: 12 °C to 15 °C, relative humidity 70% to 75%.
Weight loss during drying: 30% to 40% of initial weight.

Weight loss calculation: a 1 kg sausage must lose 300 g to 400 g to be considered dry. Drying time is approximately 3 to 4 weeks per kg.

Cooked Ham and Raw Ham

Cooked ham is cooked to an internal temperature of 65 °C to 68 °C (149 °F to 154 °F) for several hours. Raw ham (prosciutto type) is salted and dried without cooking.

Raw ham salting: the salt ratio is 3% to 4% of the ham's weight. For an 8 kg ham, this gives 8 × 0.035 = 280 g of salt. Salting duration is 1 day per kg (8 days for 8 kg).

Rapid cooling requirement: the blast chiller must bring a food item from 60 °C to 4 °C in 90 minutes maximum. This is a requirement of the National Building Code for food establishments.

Fillet knife: long, flexible blade, for filleting fish.
Paring knife: short blade, for peeling and decoration.

Maintenance: blades must be sharpened with a honing steel before each service and sharpened on a stone weekly. A dull knife is more dangerous than a sharp one because it requires more pressure.


Plating and Presentation

Plating Principles

Plating in the cold kitchen follows the principles of culinary design:

Rule of thirds: the plate is divided into three visual zones — the protein occupies one third, the accompaniment one third, the sauce and garnish one third.
Height: create height (stacking) for visual appeal, but without excess — the maximum recommended height is 7 cm.
Contrast: complementary colours (red/green, yellow/purple), varied textures.
Negative space: leave empty space on the plate (20% to 30%).

Exam trap: cheeses must be served at room temperature (10 °C to 14 °C) to release their aromas, but they must be stored at 4 °C until 30 minutes before service.

Temperature conversion: to convert °C to °F: °F = (°C × 9/5) + 32. To convert °F to °C: °C = (°F − 32) × 5/9.

Example: 74 °C = (74 × 9/5) + 32 = 133.2 + 32 = 165.2 °F.

Portion and Cost Calculations

Cost per portion calculation:

Total ingredient cost ÷ Number of portions = Cost per portion.

Example: a whole 4 kg salmon costs $48. The yield after trimming is 65% (2.6 kg of fillets). Each portion is 150 g. Number of portions = 2600 g ÷ 150 g = 17.3 portions (round down to 17). Cost per portion = $48 ÷ 17 = $2.82.

Yield calculation:

Yield (%) = (Net weight ÷ Gross weight) × 100.

Canadian Standards and Regulations

Canadian Electrical Code, Part I

The Canadian Electrical Code, Part I (C22.1) governs the electrical installation of kitchen equipment. Relevant rules for the garde manger include:

Rule 26-700: refrigerators and freezers must be connected to dedicated circuits.
Rule 26-704: commercial refrigeration equipment must have a 15 A or 20 A circuit depending on power.
Rule 8-200: electrical load calculation must include a 25% margin for refrigeration equipment.

Exam trap: a commercial 120 V, 15 A refrigerator must be on a dedicated 20 A circuit with a lockout-type receptacle to prevent accidental disconnection.

CSA B149.1 — Natural Gas and Propane Code

CSA B149.1 governs the installation of gas appliances. Relevant rules:

Clause 6.14: gas cooking appliances must be installed with a minimum clearance of 150 mm from combustible materials.
Clause 7.22: ventilation must provide a combustion air supply of 0.36 m³/min per kW of appliance power.

Canadian Food Inspection Agency (CFIA)

The CFIA governs food safety at the federal level. Key requirements for the cold kitchen:

Safe Food for Canadians Act (SFCA): any establishment that prepares food must have a preventive control plan based on HACCP.
Safe Food for Canadians Regulations: foods must be labelled with the expiry date, allergens, and storage conditions.

Priority allergens (10 in Canada): peanuts, tree nuts, sesame, soy, milk, eggs, fish, crustaceans, wheat, mustard. Any preparation containing an allergen must be identified and stored separately.


Pitfalls to Avoid

170.Confusing cold smoking and hot smoking: cold smoking (20 °C to 30 °C) does not cook the fish — it must be frozen before consumption. Hot smoking (65 °C to 90 °C) cooks the fish to a minimum internal temperature of 65 °C.
171.Forgetting the 2-hour rule: potentially hazardous foods must not remain for more than 2 cumulative hours in the danger zone (4 °C to 60 °C). This includes preparation, service, and cooling time.
172.Using boiling gelatin: gelatin must never be brought to a boil — it loses its gelling power above 60 °C.
173.Neglecting two-stage cooling: terrines and pâtés must cool from 60 °C to 20 °C in 2 hours, then from 20 °C to 4 °C in 4 hours. Cooling that is too slow promotes the growth of Clostridium perfringens.
174.Confusing vinaigrette ratios: the classic vinaigrette is 3:1 (oil:vinegar). A 1:1 vinaigrette will be too acidic and will "break" more easily.
175.Forgetting salt before oil: in a vinaigrette, salt must be dissolved in the vinegar before adding the oil. Otherwise, it remains suspended and the seasoning is uneven.
