Introduction to the Trade and Scope of Practice

The baker-pastry chef trade in Canada is a regulated trade under the Red Seal program. This first chapter establishes the essential foundations: cross-cutting professional skills, safety standards, food hygiene, raw material management, and the legal obligations that govern the practice of the trade. On the exam, approximately 8 to 12% of questions cover these professional skills and safety topics. These questions are often considered "easy" by prepared candidates because they rely on factual knowledge and standardized procedures.

Baker-pastry chefs work in various environments: artisan bakeries, industrial facilities, hotels, institutions, and food service operations. In all these contexts, the principles of food safety and accident prevention are identical and non-negotiable.


Workplace Safety and Accident Prevention

Fundamental Principles of Bakery Safety

Bakeries present specific hazards: burns (ovens, steam, hot liquids), cuts (knives, mixer blades), crushing injuries (mixers, pasta machines), slips (floury or wet floors), and musculoskeletal disorders (lifting heavy loads, repetitive movements). You must know the following prevention principles:

Occupational Health and Safety Act (federal or provincial jurisdiction depending on the workplace): the employer has an obligation to provide a safe work environment, and the employee has an obligation to follow procedures and report hazards.
WHMIS (Workplace Hazardous Materials Information System): every chemical product (cleaners, disinfectants, food additives) must have an accessible Safety Data Sheet (SDS). WHMIS pictograms must be recognized: flame (flammable), skull and crossbones (toxic), exclamation mark (health hazard), etc.
Lockout/tagout: before any cleaning or maintenance intervention on a mixer, divider, or moulder, the machine must be stopped, unplugged, or locked in the off position. The lockout procedure is mandatory and non-negotiable.

Exam trap: latex or nitrile gloves are not PPE against heat or cuts. They are used solely for food protection and hygiene.

Emergency Procedures

Fire: know the location of fire extinguishers (Class K for grease and cooking oil fires, Class ABC for ordinary fires). Never use water on a grease fire.
Burns: immediately cool the burned area under cool running water for at least 10 to 15 minutes. Do not apply ice directly, do not pop blisters.
Cuts: clean the wound, apply direct pressure to stop bleeding, then consult a healthcare professional if necessary.
Evacuation plan: know the emergency exits and assembly points.

Hazard Analysis and Inspection

You must perform a daily visual inspection of your workstation: damaged electrical cords, slippery floors, defective equipment, improper storage. Any hazard must be reported immediately to the supervisor. The golden rule: never bypass a safety device (for example, never remove a blade guard to save time).


Food Hygiene and Sanitation

Principles of the HACCP System (Hazard Analysis Critical Control Points)

The HACCP system is the reference standard for food safety in Canada. It is based on seven principles:

Exam rule: the danger zone is between 4 °C and 60 °C. Pathogenic bacteria multiply rapidly in this range. A perishable product must not remain in this zone for more than 2 hours total (cumulative across the entire chain).

Cross-Contamination

Cross-contamination is the transfer of microorganisms from a contaminated food to a safe food, through direct contact, hands, utensils, surfaces, or equipment. Prevention:

Use separate cutting boards and utensils for allergenic products (nuts, gluten, milk, eggs, soy, fish, crustaceans, sesame, sulphites) and allergen-free products.
Wash hands between handling different raw materials.
Clean and sanitize work surfaces between each production run.
Store allergenic products below non-allergenic products on shelves (to prevent particle fall-out).

Priority Allergens in Canada

Health Canada recognizes ten priority allergens: peanuts, tree nuts (almonds, hazelnuts, cashews, pecans, Brazil nuts, pistachios, macadamia nuts), sesame, milk, eggs, fish, crustaceans, molluscs, soy, wheat and triticale, and sulphites (≥ 10 ppm). You must:

Know the exact composition of every product.
Read ingredient labels at every delivery (formulations change).
Use validated cleaning procedures between production runs to prevent residual allergen presence.
Label finished products correctly according to the Food and Drugs Act and the Food and Drug Regulations.

Exam trap: gluten is not a priority allergen in itself, but wheat and triticale are. Celiac disease is a gluten intolerance, distinct from wheat allergy.

Personal Hygiene

Hand washing: running warm water, antibacterial soap, scrub for at least 20 seconds, dry with disposable towels. Mandatory after: using the washroom, handling raw materials, touching hair or face, sneezing, handling waste, taking breaks.
Wearing a hairnet or hair restraint: mandatory at all times in the production area.
Prohibited: wearing jewelry, watches, rings (except a smooth wedding band), nail polish, or artificial nails.
Clean work attire: jacket, pants, apron, shoes dedicated to production.
Illness: any employee showing symptoms of vomiting, diarrhea, fever, or infected wounds must be excluded from food handling.

Canadian Standards and Regulations

Canadian Electrical Code, Part I

The Canadian Electrical Code, Part I (CSA C22.1 standard) governs the electrical installation of buildings, including bakery equipment. You are not an electrician, but you must know the basic rules to work safely:

Rule 8-200: circuits and equipment must be protected against overcurrent (fuses, circuit breakers). Never overload an electrical outlet with multiple appliances.
Rule 2-100: all electrical equipment must be installed and maintained in accordance with the manufacturer's instructions.
Bakery equipment (ovens, mixers) must be connected to dedicated circuits and properly grounded.
In case of electrical failure (sparks, burning smell, mild electric shock), immediately cut the power supply and report the problem.

CSA B149.1 — Natural Gas and Propane Code

CSA B149.1 is the national standard for the installation and maintenance of natural gas and propane appliances. Bakery ovens are often gas-fired. Key points:

The installation, modification, and maintenance of gas appliances must be performed by a certified technician.
You must know the location of the emergency gas shut-off valve.
In case of a gas odour: do not operate any electrical switch, do not light any flame, evacuate the area, then call emergency services.
Room ventilation must comply with code requirements to prevent carbon monoxide (CO) accumulation.

Food and Drugs Act and Safe Food for Canadians Regulations

The Food and Drugs Act (R.S.C. 1985, c. F-27) and the Safe Food for Canadians Regulations (SOR/2018-108) establish the basic requirements for selling food in Canada. You must:

Ensure that food sold does not contain harmful substances or contaminants beyond established limits.
Maintain traceability records (where ingredients come from, where finished products go).
Apply HACCP principles in your establishment.

Canadian Food Inspection Agency (CFIA)

The CFIA is responsible for verifying compliance with food standards. Inspectors may conduct unannounced inspections. You must be able to demonstrate:

Traceability of ingredients (invoices, delivery slips).
Temperature records (refrigerators, freezers, baking).
Cleaning and sanitation procedures.
Staff training in food hygiene.

Raw Material Management and Storage

Receiving Goods

At receiving, you must check:

Temperature: dairy products must arrive at ≤ 4 °C, frozen products at ≤ −18 °C, eggs at ≤ 7 °C (refrigerated) or at room temperature (non-refrigerated, but then used quickly).
Packaging integrity: no tears, leaks, or bulging (sign of bacterial contamination).
Expiry dates: do not accept a product whose date has passed or is near.
Appearance: mould, insects, abnormal odours → refuse the delivery.

Storage Using the FIFO Principle (First In, First Out)

The FIFO principle is fundamental: products received first must be used first. This rule applies to all ingredients, including flours, sugars, fats, and refrigerated products. You must:

Place new products behind old ones on shelves.
Regularly check expiry dates.

Exam trap: whole wheat flour and whole grain flours go rancid faster than white flour due to their natural oil content. They should be stored in the refrigerator or freezer for extended preservation.

Pest Control

The presence of insects (weevils, flour moths, cockroaches) and rodents is a major risk in bakeries. Prevention:

Regular visual inspection of stock.
Storage in airtight plastic or metal containers (never in original bags after opening).
Immediate cleaning of flour and sugar spills.
Installation of traps and bait stations (by a certified pest control service).
Immediate reporting of any infestation to the supervisor.

Communication and Teamwork

Communication in the Production Environment

You often work as part of a team. Clear communication is essential for:

Transmitting production information (quantities, modified recipes, equipment problems).
Reporting hazards and incidents.
Coordinating baking and cooling schedules.
Training apprentices and new employees.

Communication must be precise, concise, and documented. Any modification to a standard recipe must be noted in writing and validated by the supervisor.

Documentation and Records

The following records must be kept up to date:

Temperature logs (refrigerators, freezers, baking).
Cleaning and sanitation logs.
Goods receiving logs.
Staff training records.
Traceability records (production batches, ingredients used).

These documents are required during CFIA inspections and sanitation audits.

Metric System and Conversions

Canada uses the metric system. You must master the following conversions:

Baker's Percentage Calculations

Baker's percentage (or flour percentage) is the standard method for expressing bread recipes. Flour always represents 100%, and all other ingredients are expressed as a percentage of the flour weight.

Formula: % of an ingredient = (ingredient weight ÷ total flour weight) × 100

Example: a recipe contains 5000 g of flour and 3000 g of water. The hydration percentage is: (3000 ÷ 5000) × 100 = 60%.

This method allows you to:

Compare recipes with each other.
Adjust quantities based on production needs.
Calculate the amount of water needed for a target hydration.

Exam trap: baker's percentages do not total 100%. The total of percentages exceeds 100% because flour is the fixed base.

Yield and Losses

You must calculate yield (number of pieces produced) and losses (evaporation, material loss, unsellable products). Yield is expressed as a percentage:

Yield (%) = (total weight of finished products ÷ total weight of ingredients) × 100

Example: 10 kg of dough produces 9 kg of baked bread. Yield = (9 ÷ 10) × 100 = 90%. The 10% loss is mainly due to water evaporation during baking.

Cost Calculations

The cost of a product is calculated by adding the cost of each ingredient (weight × unit price), then dividing by the number of pieces produced. You must also include indirect costs (energy, labour, packaging) to determine the selling price.

Questions in this chapter are often recognition questions (true/false, multiple choice) or simple calculations (conversions, percentages).
Memorize the critical temperatures and priority allergens: these are recurring questions.
For baker's percentage calculations, practice with concrete examples until the method becomes automatic.
Read each question twice: examiners often insert subtle distractors (units, temperature ranges, inverted definitions).
