Baker's Percentage Calculations
Baker's percentage (or flour percentage) is the standard method for expressing bread recipes. Flour always represents 100%, and all other ingredients are expressed as a percentage of the flour weight.
Formula: % of an ingredient = (ingredient weight ÷ total flour weight) × 100
Example: a recipe contains 5000 g of flour and 3000 g of water. The hydration percentage is: (3000 ÷ 5000) × 100 = 60%.

Yield (%) = (total weight of finished products ÷ total weight of ingredients) × 100
Example: 10 kg of dough produces 9 kg of baked bread. Yield = (9 ÷ 10) × 100 = 90%. The 10% loss is mainly due to water evaporation during baking.
Cost Calculations
The cost of a product is calculated by adding the cost of each ingredient (weight × unit price), then dividing by the number of pieces produced. You must also include indirect costs (energy, labour, packaging) to determine the selling price.
