1. Fundamental Principles of Food Safety

1.1 Food Hazards: Classification and Examples

A food hazard is any biological, chemical, or physical agent present in food that can cause a harmful effect on consumer health. You must be able to identify and classify these hazards in a professional kitchen context.

Key Exam Point: The Red Seal will often present you with a cross-contamination scenario and ask you to identify the type of hazard involved. Cross-contamination is the transfer of microorganisms from one food (usually raw) to another food (usually cooked or ready-to-eat) through a surface, utensil, or hands. It is the most common biological hazard in the kitchen.

1.2 Pathogenic Microorganisms: Growth Conditions

To control bacteria, you must know their optimal growth conditions. The T.T.T. (Time, Temperature, Time) model is fundamental, but the Red Seal requires a more detailed understanding.

The six conditions for bacterial growth (mnemonic: FAT TOM):

F (Food): Protein-rich foods (meat, poultry, fish, eggs, dairy) — these are potentially hazardous foods.
A (Acidity): Optimal pH between 4.6 and 7.5. Acidic foods (pH < 4.6) such as pickles or canned tomatoes inhibit growth.

M (Moisture): Water activity (aw) — bacteria need available water. Dried foods (aw < 0.85) are safe.

Temperature Calculation — °F ↔ °C Conversion:

The exact formula is: °C = (°F − 32) × 5/9 and °F = (°C × 9/5) + 32.

Exam Example: A recipe calls for cooking at 325 °F. What is the temperature in °C?

Calculation: (325 − 32) = 293; 293 × 5 = 1465; 1465 / 9 = 162.8 °C. Rounded to 163 °C.


2. Safe Cooking and Holding Temperatures

2.1 Minimum Internal Cooking Temperatures (Canadian Standards)

The following table is mandatory to memorize. It is based on Health Canada and CFIA guidelines, which are those applied in the Red Seal exam.

Golden Rule for the Exam: The Red Seal often tests the distinction between whole meat (63 °C) and ground meat (71 °C). The physiological reason: grinding introduces bacteria from the surface to the interior of the meat, requiring a higher temperature to destroy them.

2.2 Hot and Cold Holding

Hot holding: Hot foods must be maintained at ≥ 60 °C (140 °F) . Below this temperature, they enter the danger zone.
Cold holding: Cold foods must be maintained at ≤ 4 °C (40 °F) .

Exam Trap: You will often be asked whether a food held at 55 °C is safe. The answer is no — 55 °C is in the danger zone (4 °C to 60 °C). It is not enough for the food to be "warm"; it must be at ≥ 60 °C.

2.3 Cooling Foods — Mandatory Procedure

Cooling is a critical procedure that is often misunderstood. Canadian standards require a two-stage cooling process:

Typical Exam Calculation: A stew is cooked at 2:00 PM and reaches 60 °C at 2:30 PM. At 4:15 PM, it is at 20 °C. At 6:45 PM, it reaches 4 °C. Is this compliant?

Analysis: Stage 1: 2:30 PM → 4:15 PM = 1 h 45 (≤ 2 h ✓). Stage 2: 4:15 PM → 6:45 PM = 2 h 30 (≤ 4 h ✓). Total time: 2:30 PM → 6:45 PM = 4 h 15 (≤ 6 h ✓). Compliant.


3. HACCP — Hazard Analysis and Critical Control Points

3.1 The 7 Principles of HACCP

The HACCP system (Hazard Analysis and Critical Control Points) is the food safety management standard in Canada. The Red Seal exam will ask you to identify the principles and apply them to scenarios.

Key Exam Point: You will often be asked to distinguish between a CCP (critical control point) and a PRP (prerequisite program). A PRP is a general control measure (e.g., hand washing, surface cleaning) that is not specific to one point in the process. A CCP is a specific point where control is essential (e.g., cooking). Receiving goods is a PRP, not a CCP, because the hazard can be controlled later.

Storage Rule — FIFO (First In, First Out): The first product in must be the first product out. This rule applies to all foods but is critical for perishable products.

Cleaning: Removal of visible dirt (food debris, grease) using detergent and water. Cleaning does not eliminate microorganisms.
Sanitizing: Reducing microorganisms to a safe level using a chemical agent or heat.

Typical Exam Calculation: You need to prepare a 100 ppm chlorine sanitizing solution. The concentrated product contains 10% active chlorine. What volume of product is needed for 10 litres of water?

Formula: C1 × V1 = C2 × V2

C1 = 10% = 100,000 ppm
V1 = unknown (volume of product)
C2 = 100 ppm
V2 = 10 L = 10,000 mL
V1 = (100 × 10,000) / 100,000 = 10 mL of product for 10 L of water.

5.3 Equipment Cleaning — CIP (Clean-In-Place) Procedure

For equipment that cannot be disassembled (e.g., ice machines, fixed meat slicers), the CIP procedure is used:

7. Food Allergens — Management and Prevention

7.1 The 10 Priority Allergens in Canada

Canada recognizes 10 priority allergens (CFIA regulations):

Exam Trap: Sesame has been a distinct priority allergen in Canada since 2023. Gluten is not a priority allergen in itself — wheat is. People with celiac disease react to gluten, but Canadian regulations list wheat.

7.2 Preventing Allergenic Cross-Contamination

Use different coloured cutting boards for allergen-free dishes.
Clean and sanitize all surfaces before preparing an allergen-free dish.
Use dedicated utensils (e.g., tongs, spoons) for allergen-free dishes.
Never remove an allergen from a dish (e.g., removing nuts from a salad) — cross-contamination has already occurred.
Check product labels for "may contain" or "manufactured in a facility that processes" statements.
Dedicated fryer: If an establishment fries breaded foods containing wheat in the same oil as french fries, cross-contamination occurs. Use a separate fryer or a dedicated basket.

8. Receiving and Temperature Control — Instruments and Calibration

8.2 Thermometer Calibration — Ice Water Method

Garbage bins must be covered and lined with plastic bags.
Waste storage areas must be away from preparation areas and kept clean.
Grease traps must be cleaned on an established schedule (usually monthly, depending on volume).
Organic waste (peelings, leftovers) must be composted or disposed of quickly to avoid odours and pests.

9.2 Pest Control — Principles

Prevention: Seal cracks, install door sweeps, keep windows closed or screened.
Inspection: Regularly check for signs of infestation (droppings, gnaw marks, dead insects).
Elimination: Use a professional pest control service.
Prohibition: Pesticides must never be applied by kitchen staff. Only certified professionals may do so.
Food storage: Foods must be stored at least 15 cm (6 inches) off the floor to facilitate inspection and cleaning.

10. Documentation and Traceability

10.1 Mandatory Records

The Red Seal tests your knowledge of required documents in a food establishment:
