Canadian Food Safety Standards and Regulations

Although the National Building Code does not apply directly to commercial kitchens, you must be familiar with the standards that govern your work environment. Professional kitchens are subject to the Canadian Electrical Code, Part I (CE Code) (C22.1), which defines requirements for electrical installations. Rule 8-200 of this code concerns circuit load calculations, which is relevant for understanding the usage limits of kitchen equipment.

The Temperature Danger Zone

The 2-hour / 4-hour rule is crucial: perishable foods must not remain in the danger zone for more than 2 cumulative hours before being consumed or refrigerated. Beyond 4 cumulative hours, the food must be discarded.

For the exam, remember this calculation: if a food item has been left at room temperature for 1 hour, then refrigerated, then brought back out for 1.5 hours, the cumulative time in the danger zone is 2.5 hours. The food must be consumed immediately or discarded.

Cross-Contamination: Principles and Prevention

Cross-contamination is the transfer of microorganisms from a contaminated food to a safe food. It can be direct (contact between foods) or indirect (via surfaces, utensils, hands, clothing). Prevention principles include:

Using different coloured cutting boards (red for raw meats, green for vegetables, blue for fish, etc.)

Attire: clean chef jacket, pants, apron, closed-toe slip-resistant footwear, hair net or cap, single-use gloves if required
Prohibitions: wearing jewellery (except a plain wedding band), having polished or artificial nails, working with open wounds (unless covered with a waterproof bandage), smoking in food preparation areas
Illness: do not work if you have symptoms of vomiting, diarrhoea, fever, or if you have a skin infection. Individuals with communicable diseases (hepatitis A, salmonellosis, etc.) must be excluded from work
